Maceration and fermentation at a controlled temperature. Aged with micro-oxygenation. Bottled for at least 4 months.

Amarone della Valpolicella

Grape Processing: After careful selection in the vineyard, the grapes are placed in a drying room for natural over-ripening, resulting in a 35 to 40% weight loss (average drying time 110 days). Vinification: Soft pressing in the first half of January, red vinification using the submerged cap method with periodic daily pumping over at a controlled temperature (20-22°C). Maceration lasts approximately 25 days. Maturation: Very slow fermentation and aging for 36 months. Bottling in a sterile line, vacuum-sealed. Aging in bottle: approximately 6 months.

VINIFICATION: Grapes are destemmed, gently pressed qualified and carried on to tanks where they are fermentated with controlled temperature, periodic analysis and the greatest cleanliness allowed to obtain a high quality product witout alteration risks. SUGGESTING: Serving temperature 18° – 20° C ORGANOLEPTIC CHARACTERISTICS: A vivid red ruby colored wine that is intricate and with a well decided scent. Its bouquet presents a sweet vanilla flavor, combined with the peculiar scent of fruit jam, plum and morello. It results in a character wine to the palate, potent but very balanced, with very good persistence. FOOD PAIRING: It is perfectly served with main courses like ragout sauc with pasta, roast red meatt, game, ripening cheese and strongly flavoured dishes. It also well matches pork product and cheese.

It comes from one of the most suitable areas of Abruzzo, from an ancient vineyard trained in Tendone, at an ideal altitude to ensure a formidable temperature range and magnificent exposure.

A Montepulciano d’Abruzzo DOC obtained from a strictly manual mid-October harvest, harvested using certified organic methods, ensuring maximum respect for the surrounding environment.

Winemaking
Vinification in temperature-controlled stainless steel vats is followed by malolactic fermentation, 6 months of maturation in concrete vats, and 12 months in barriques, before being bottled in the absence of oxygen and aged for another 6 months.

The nose is dominated by aromas of red fruits such as blackberry and raspberry, with hints of violet and iris. Full-bodied and savory, moderately tannic, with a pleasant aftertaste of red fruits. This wine pairs well with mixed grills, fine poultry, and cheeses.
